THURSDAY 10.7.10 – Paleo Ice Cream

A few weeks ago I made a trip down to CrossFit New England in Natick. Heather Bergeron runs the kids program there. The boys were able to take her class and I was able to observe and get some great ideas for my own FitCamp Kids class. Heather is an amazing CrossFit athlete and placed 8th overall in the CrossFit Games this past year. She is a wealth of knowledge and is truly passionate about children’s fitness. Heather has a great blog in which she features all kinds of great information on her kids program along with some videos and recipes.  I stumbled upon this great video below of two of her Crossfitters (Maya and Bailey) making PALEO ICE CREAM, our recipe of the week.  Skip the DQ this week and try this yummy treat with the kids instead, it’s easy, healthy and takes no time at all.

PALEO ICE CREAM

This recipe is pretty versatile, but use the following as guidelines. You will need to play around with it to find the right consistency.
(3-4) C     Frozen Fruit (anything goes here folks, be creative)
(1/2) C     Coconut Milk (can sub in lite, if you are counting calories)
(1 ) Scoop Whey Protein (Try the ProGrade Protein we carry at the studio or whatever powder you use, this will give it some sweetness so if you do not add this in use some honey to sweeten to your taste). 
Water  (add as much as you need to make the ice cream the right consistency)
PREPARATION
Put fruit, coconut milk and protein powder (or sweetener of choice) into a food processor. Blend until smooth add water if needed. Eat and enjoy!!

TEAM Throwdown!  –  Saturday, October 16th, 9am-3pm.

Our first Team Throwdown is just over a week away.  This is going to be a blast so if you can make it then be sure to add your name to the throwdown whiteboard at the studio before Monday 10/11/10.  Teams will be e-mailed out early next week.  We also have a food list sign-up sheet posted on the board for our “pot-luck” cookout after 3pm, so start thinking about what healthy dish you can bring and share your favorite recipe.  Spectators welcome!  Hope you can make it!
