Hey Team!
Last night I was home doing the usual holiday chores; wrapping gifts, baking and stuffing stockings. I needed something quick,easy and mess free for dinner (I knew Nick was on his way home soon and would be starving!) I whipped together these “quiches” and they are delish! This was acutally my mom’s idea- Thanks Mom!
I thought I would share this for you for the holiday weekend. These are something you could make while the kids are opening the stockings. They literally take 5 minutes to put together and by the time everyone is done opening gifts, you will have a healthy breakfast everyone will enjoy. Starting the day off with a healthy meal will jump start you on the right foot to making healthy decisions throughout the weekend.

“Turkey Bacon Quiches“
Ingredients:
12 pieces of Turkey bacon cut in 1/2(uncured if you can find it)
12 eggs
1/2 c Organic Salsa
2 handfuls of spinach (or veggie of choice-use whats in your fridge)
Directions:
Pre-heat oven to 425 degrees. Grease a cupcake tin with olive oil. Mix eggs, salsa and veggies in a bowl. Line the cupcake tins with 2 half pieces of the turkey bacon in an X. Fill the tins with the egg mixture to the top. Bake for 15-20 minutes until eggs are cooked through. Make 12 quiches.
