Friday 2.4.11 – Paleo Pancakes

The perfect “post workout” meal or breakfast = Paleo Pancakes! YUM!

I am hooked on these- I have tried many different recipes and altered them along the way to find a recipe that is simple for me and protein packed.  It serves as a great breakfast paired with fruit sliced up as a topping or a quick grab and go post workout snack! Give ’em a try and add your own twist!  I’m going to try a variation with pumpkin today 🙂
Enjoy!  TIFF

Ingredients:
6 Eggs
1/2c Unsweetened all natural applesauce
3/4c Almong Flour
3 scoops Egg or Hemp Protein
1/2 c Coconut milk
1/2 tsp baking soda
cinnamon to taste
Directions: Mix all ingredients into a large bowl making sure to wisk all of the bumps from the protein powder out of the mix.  Once blended, heat a large pan and coat the bottom with a light drizzle of oil.  Spoon 1/4 c of mixture onto hot pan.  Flip once sides begin to bubble.  Cook on both sides until golden brown. Dee’s Little Paleolithic Cookbook:
Over the past few months Deanna Navaroli (lil’ Dee) has been working hard in the kitchen to put together her own Paleo Cookbook. After months of hard work (and lots of taste testing) it’s finally done and she really out did herself. If you are looking for some pretty amazing recipes to add to your Paleo lifestyle (and some incredible desserts you’ve got to try and won’t believe what she came up with) then check out her new cookbook here… Dee’s Little Paleolithic Cookbook
